I love cereal – any and every kind. As far back as I can remember, I hardly ever ate anything else for breakfast. In the morning before school I could easily wolf down two huge bowls of Life, Rice Krispies, Frosted Mini Wheats, Raisin Bran, Cheerios, Froot Loops, you name it. My cereal addiction didn’t stop when I got to college but I just couldn’t manage to get myself to the dining hall before my 9am classes. Easy solution – keep cereal and milk in my dorm room. Big problem – cereal at the campus convenience store was obscenely expensive and I was going through over a box a week. Finally, parents’ weekend rolled around some time in October and my parents took me to Costco to stock up. We brought back somewhere between 15-20 boxes of cereal to my dorm room and then realized that, oh yeah, dorm rooms are TINY. My roommate happened to be gone for the weekend and she came back Sunday night to a room packed with cereal boxes in every nook and cranny. I’m not kidding; there were boxes under my bed, stacked up in the back of the closet, behind the TV, between my desk and my dresser, and god knows where else.
I have NEVER needed an excuse to eat cereal at any time of day, but in case you do, I can’t think of a better reason to eat cereal for dessert than Lucky Charms Cereal Milk Ice Cream Pie.
I first heard about cereal milk ice cream a year or two ago when I saw something on Instagram about Momofuku Milk Bar’s cereal milk soft serve. I’ve been wanting to try it ever since but I just haven’t been able to make it there. This summer I’ve made this to-die-for Peanut Butter Ice Cream Oreo Pie so many times and each time I do I’m amazed at how easy it is to make delicious no-churn ice cream. It was only a matter of time before I had to try another flavor and when I came up with the idea to make my own cereal milk ice cream, I was immediately obsessed. I really think it would be great with most/any kinds of cereal – Milk Bar uses Corn Flakes for theirs – but I think Lucky Charms lends itself particularly well to a pie.
The ice cream is very easy to make by soaking Lucky Charms in heavy cream and then straining before turning into ice cream. For the crust I used Lucky Charms minus the marshmallows, and then sprinkled some Lucky Charms on top of the finished pie. It came together better than I could have hoped and makes a fun, delicious, and different dessert. It’s VERY easy to make but people will undoubtedly be impressed.
Begin by soaking Lucky Charms in heavy cream for a few hours, stirring once in a while if you can. While the cereal is soaking, separate Lucky Charms cereal from the marshmallows until you have 3 1/2 cups of plain cereal.
Crush the cereal and mix with one stick of melted unsalted butter. Press the cereal mixture into a pie dish (sorry, no picture of this). Stick it in the freezer to set.
When ready to continue, drain the cereal out of the heavy cream so you’re left with Lucky Charms flavored cream. Dispose of the disgustingly soggy cereal.
Next, whip the heavy cream until stiff peaks form. Adding food coloring is optional but I wanted to give mine a bright fun color. I’m not sure what color the ice cream would turn out if you didn’t add food coloring but I think it would be a pale gray-ish off-white (hence, why I added food coloring). Then fold the whipped cream into the sweetened condensed milk until smooth.
Finally, fold in the separated marshmallows and pour the whole thing into the pie dish. Cover the top with Lucky Charms and freeze for 6 or more hours. You’re done! It’s really that easy.
Lucky Charms Cereal Milk Ice Cream Pie
- 1 box of Lucky Charms cereal
- 2 cups heavy cream
- 1 can (14 oz) sweetened condensed milk
- 1 stick (8 tbs) unsalted butter, melted
- Optional – food coloring
- Soak 1 1/2 cups of Lucky Charms (including marshmallows) in 1 3/4 cups of heavy cream for at least 2 hours. Stir the cereal every so often if you can.
- While cereal is soaking, separate plain cereal from marshmallows until you have 3 1/2 cups of plain cereal. Set the marshmallows aside and then crush the cereal (by hand or in a food processor) until you have medium-fine crumbs,. Combine with melted butter and then press the mixture evenly into an 8-10″ pie dish. Freeze.
- Drain the cereal out of the heavy cream, squeezing as much cream out of the cereal as you can. Then add in remaining 1/4 cup of heavy cream. Whip until stiff peaks form, adding in optional food coloring as it whips until desired color is reached.
- Empty the can of sweetened condensed milk into a large bowl and then fold the whipped cream into it. Once fully combined and smooth, fold in some marshmallows from what you had separated earlier. The marshmallows end up melting into the ice cream so they won’t be visible in the finished pie, but they add a little bit more sweetness.
- Fill the frozen pie crust with ice cream mixture and top with 2 cups of Lucky Charms. Freeze for at least 6 hours.
